Vegan Diet for Gout

Gout is a form of arthritis caused by an accumulation of urate crystals around the joints. The big toe is a common joint affected by gout, but it is possible to have gout in other areas of the body. Urate crystals form from a buildup of uric acid in the bloodstream. The body produces uric acid to break down purines, which are found in some foods and in the body naturally. A vegan diet must eliminate purine foods to avoid gout attacks.

Foods to Avoid

    Most foods that are high in protein are animal products, with the exception of yeast and yeast extract. Yeast extract is used in some foods as an additive to fortify the food with vitamin B12. Avoid these foods during a gout attack and limit consumption to prevent an attack. Obtain vitamin B12 from foods other than those containing yeast extracts. Also avoid supplements containing yeast extract.
    You may consume foods with moderate levels of purine, but you should eat them in moderation. Foods such as cauliflower, asparagus, spinach, green peas and mushrooms have moderate amounts of purine. You should limit the amount of oatmeal, bran, wheat bran and wheat germ to prevent an attack of gout. These foods have a moderate level of purine.

Vegan Protein

    Animal sources of protein can be high in purines, but some vegan proteins have moderate amounts. Dried peas, lentils and beans are all moderate in protein. Eat these foods in moderation to avoid gout attacks and high levels of uric acid.
    Nuts and peanut butter are low in purines and can be eaten on a vegan diet as much as you like. These are excellent sources of protein and low in purine. Soy and soy products such as tofu can also be eaten on a vegan gout diet.

Low-Purine Foods

    Most vegetables (but not all) are healthy and low in purines. You can consume all fruits, refined breads and cereals, pasta, rice, all fats and oils, sweets, coffee and tea, salt, chocolate and all condiments. These are low-purine foods that will not contribute to the buildup of uric acid in the bloodstream.
