Mango pie is a sweet, filling treat that any raw foodist can enjoy. This recipe requires a bit of prep time, but it can be made year-round, regardless of whether you have access to fresh mangoes in season. You can easily modify it to, adding splashes of key lime, guava or other juices and purees to add more complexity to the pie. Add this to my Recipe Box.

Put 8 oz. dried mangoes in a large measuring cup. Fill the cup with water until it reaches the 2 cup mark. Allow the mangoes to soak in the water for two hours.
2Pour the mangoes and water from the measuring cup into a blender. Puree until smooth and the chunks of mango are gone. You might need to add 1/4 cup water to keep the mixture from becoming too thick as you puree it.
3In a food processor, chop 3/4 cup raw almonds, 3/4 cup raw walnuts and 3/4 cup dried dates.
4Press the nuts and dates into a pie pan to make the pie crust.
5Spoon in the pureed mango, chill and serve.
